    3 skinless, boneless, chicken breasts, cubed
    10.75 oz. can Low Sodium Chicken Broth
    3/4 cup Apricot Preserves
    1 tbsp. Low Sodium Soy Sauce
    2 tbsp. cornstarch
    2 tbsp. water


1. Spray a large skillet with nonstick cooking spray. Brown chicken in heated skillet. (Until no longer pink in the center.)
2. Remove Chicken, add broth, jam, and soy sauce. Bring to a low bubbling boil Mix cornstarch and water in a small bowl or cup, and stir into pan with sauce, continue stirring until sauce thickens. Return chicken to pan, and turn to coat thoroughly with sauce.

You can also add 1 cup frozen peas, and serve over rice.
