Introduction

Ingredients

    1 pound Fresh Strawberries
    2 1/2 cups Sugar (can substiute with Splenda)
    1 package powdered low-sugar fruit pectin

Directions

Prepare the glass canning jars or plastice containers.
In a large saucepan coursely mash the strawberries. Add 1/4 cup of the sugar and pectin, stiring until blended. Let come to a boil, stir in remaining 2 1/2 cups of sugar. Return to a full boil. Countine boiling, stirring constantly for 1 minute. Remove from heat and skim off foam.
Divide into jars, keeping jam 1/2 inche away from tops, wipe rims clean. Turn on lids tightly, let stand at room temp for 24 hours. Chill in frig for 3 weeks or freeze for up to 1 year.

Serving Size: Makes 4 (1/2 pint) glass jars full - 1 Tablespoon servings = 64 Tablespoons total recipe
