Introduction

This is a recipe that I found off of the internet but have changed to use the ingredients that I have at home. Serve with salsa or additional cheese or sour cream, but be sure to add those extra calories in as the recipe calories are based on the recipe ingredients only! Ingredients

    -cooking spray
    -8oz. Velveeta reduced fat cheese product
    -1/2 cup fat free sour cream
    -1/4 cup fate free evaporated milk
    -1/4 cup scallion (green part only), minced
    -1/4 teaspoon crushed red pepper flakes
    -3 cups cooked chicken breasts, chopped (I used Hormel Premium 97% FF Chicken BReast in water)
    -6 tortillas (I used Don Marcos healthy style flour tortillas)
    -1/4 cup shredded reduced fat cheddar cheese, sharp or mild

Directions

1. Preheat oven to 350 degrees.
2. Coat a 9-inch baking dish with cooking spray.
3. In a microwave-safe bowl, combine cheese product and sour cream; cover and microwave on high until cheese melts, about 1 1/2 to 2 minutes. Remove half of the melted cheese to a small bowl and stir in evaporated milk; set aside.
4. Add scallions, red pepper flakes and chicken to the remaining cheese mixture; stir to coat.
5. Spoon about 1/2 cup of chicken mixture down center of each tortilla; fold in sides of tortilla to cover filling and place tortillas in a single layer in prepared dish; spoon remaining cheese sauce over top and then sprinkle with shredded cheddar cheese.
6. Bake until chees topping is bubbly, about 20 to 25 minutes.
Serve with salsa, additional cheese & sour cream if desired but be sure to add in the extra calories!

Makes 6 enchiladas, 1 enchilada per serving.
