This is a lovely cool dessert for spring. This is a lovely cool dessert for spring.
Number of Servings: 12


    14 oz can sweetened condensed milk
    1 T lemon juice
    8 oz container cool whip
    3 drops yellow food color for frosting (optional)
    18.5 oz pkg lemon cake mix (without pudding)
    6 oz frozen lemonade concentrate
    Zest of one lemon


Prepare cake mix according to package. Cool in pan 10 minutes. Remove from pan and let cool completely. If you're using a 9x13 pan split cake horizontally into 2 layers. If you're using round pans you don't need to slice your cakes. Combine remaining ingredients except lemon slices and mix well. Spread between layers and on top and sides of cake. Keep refrigerated. To serve garnish with strawberries and lemon slices if desired.

You can use Lite cool whip in this recipe but fat free doesn't seem to have enough umph to keep the frosting together.
