Introduction

i made this up to help with the Atkins diet they hold together pretty well with out fillers. I put a dollop of sour cream or a carb friendly steak sauce on top when i eat them.

just under 1 carb each. but i count them as 1 carb apiece

Number of Servings: 12

Ingredients

    2 lbs of lean ground beef (the leaner the better)
    4 tbs of Tostitos All Natural Chunky Salsa
    1 cup of Colby Jack cheese or Mexican Blend Cheese
    2 eggs
    2 tbs of Brown spicy mustard.

    Pepper, Salt and any other spices that you would like to put in there that are carb free.

    and a 12 Cup - Cupcake Tin

Directions

Pre-heat oven to 350'.
Mix all ingredients together
pinch off meat mixture enough to fill each cupcake tin to the top
place in oven and cook 20-35 mins or till brown on top
