Ingredients

    3 cups All Bran Original Cereal
    1 cup boiling water
    3/4 cup sugar
    2 1/2 cups plain whole wheat flour
    2 tsp. baking soda
    1/2 tsp. salt
    1/2 cup canola oil
    2 large eggs
    2 cups lowfat buttermilk

Directions

Preheat oven to 375 degrees. Add 1 cup boiling water to 1 cup All Bran cereal, let stand 5 minutes. Add remaining cups All Bran cereal to mixture. In a separate bowl, mix sugar, flour, baking soda, salt, oil, eggs and buttermilk together. Add cereal mixture and mix until blended. Muffins can be baked immediately or batter may be covered and refrigerated overnight for the next morning. Bake in greased muffin pan for 20 to 25 minutes. Yield 2 dozen.
