Ingredients

    1/2 cup all-purpose flour
    1/3 cup whole-wheat flour
    5 teaspoons sugar
    1/2 teaspoons baking powder
    1/4 tsp salt
    1/4 cup Greek yogurt
    1/2 cup milk
    1 large egg
    1/2 teaspoon pure vanilla extract
    1/2 tsp cinnamon
    1 small banana, diced
    1/2 cup (about 2 ounces) walnuts, toasted and coarsely chopped

Directions

Preheat oven to 200˚F. Whisk flours, sugar, baking powder, cinnamon and salt in a large bowl; set aside. Whisk together yogurt, milk, egg and vanilla; whisk into flour mixture. Using a rubber spatula, fold in chopped walnuts and bananas; set batter aside

Heat nonstick skillet over medium heat. Working in batches of 2, pour in 1/4 cup batter for each pancake. Cook until small bubbles form, 2 1/2 to 3 minutes. Flip; cook until golden brown, about 2 minutes. Transfer to baking sheet in oven to keep warm until ready to serve.
