    1 lb. extra lean ground sirloin
    3 Tbs. margarine with olive oil
    2 Tbs. flour
    1 tsp. chilli powder
    1/2 tsp. salt
    1 cup skim milk
    1/2 fat free cheddar cheese
    1 Tbs. chopped pimento, drained
    3 eggs, seperated
    2 Tbs. grated parmesan cheese


In a large skillet, brown meat , drain offf excess grease, set aside. In same pan, melt the margarine, stir in flour, chilli powder, and 1/2 tsp. salt. Add milk all at once, cook and stir til thick and bubbly. Stir in cheddar cheese til melted. Stir in meat, beans, and pimento and heat til bubbly again. Spoon meat mixture into 10 inch quiche dish.
In smaller bowl, beat egg whites to stiff peaks. In another bowl beat egg yolks with 1/8 tsp. salt til thick. Fold egg yolks into egg whites and spread over hot meat mixture in dish. Sprinkle parmesan cheese on top. Bake in 350 degree oven for 20-25 or til top is golden brown. Serve puff immediately.
