    12 (1.2kg) tomatoes, halved
    Pinch of castor sugar
    1 Tbl olve oil
    12 vine-ripened cherry tomatoes
    50g butter
    2 each onions, carrots, celery stalks & garlic cloves, chopped
    400g can chopped tomaotes
    2 Tbl sun-dried tomato paste
    1 bay leave
    1 basil sprig
    1l vegetable stock
    12 baby bocconcini


Preheat the oven to 160C. Place roma tomatoes, cut-side up, on a baking tray. Top with sugar, drizzle with oil and season. Roast for 30 minutes until softenend.
