This is my version of Sweet Potato Fries! This is my version of Sweet Potato Fries!
Number of Servings: 4


    2, 5 inch sweet potatoes
    1/4 cup olive oil
    Salt (I like coarse ground sea salt)
    Pepper (fresh ground)
    Cayenne Pepper


Cut potatoes into fries. Soak in a bowl of ice water for 30 minutes. In the meantime, prep the rest of dinner. Drain and dry well. Preheat oven to 400 to 450. Also preheat foil lined baking pan in the oven at the same time. Mix up the olive oil, salt, pepper, and cayenne pepper in a large bowl. Place the well dried sweet potatoes in the bowl and toss to coat.
Spread the coated sweet potatoes onto pre-heated and lined baking sheet (gotta love that sizzle!). Bake for 20 mintues, toss, attempting to turn them all over, but no obsessing about it. Bake for another 10-20 minutes or until desired doneness. Serve!

You can also set up a cooling rack on top of the baking sheet and try to airrate the fries more. I have not noticed a significant difference in the crispiness. These will not crisp like normal fries, but have a great flavor. The step of placing them in cold water does help them crisp a bit better.
