    2 cups shredded potatoes
    9 large eggs
    1 cups shredded mozerella cheese (low fat)
    1/2 cup shredded cheddar cheese
    1/2 cup 2% milk


spray baking dish with zero calorie non-stick cooking spray

Line bottom of pan with potatoes

in a medium bowl, beat eggs. Add milk and mozzerella cheese.

Pour over eggs

top with Cheddar cheese. cover with foil.

bake at 400 degrees for 1 hour. let cool on baking rack.
