Number of Servings: 2


    1/4 c. Red Onion, sliced
    3/4 c. Broccoli, chopped
    1 c. Cauliflower, chopped
    1 Tomato, diced
    1/2 c. Red or Yellow Bell Peppers, diced
    1/2 c. Spinach
    2 tbsp Cilantro, chopped
    1 block firm Tofu, crumbled
    Salt, to taste
    Black Pepper, to taste
    Cayenne Pepper, to taste


Spray the bottom of a large skillet with non-stick cooking spray. On medium-high heat, add the onion and sautee until soft. Add the broccoli and cauliflower, cover and steam for one minute. Add the tomato, bell pepper, and spinach, and stir fry for two minutes. Throw in cilantro, crumbled tofu, and season to taste with salt, cayenne, pepper, and lime.
