    Egg white, 2
    Canola Oil, 2 tbsp
    Splenda No Calorie Sweetener, 20 tsp

    Whole Wheat Flour, 1.5 cup
    Flour, white, 1.5 cup
    Flax Seed Meal (ground flax), 1 tbsp
    Baking Powder, 3 tsp
    Cinnamon, ground, 1 tsp
    Almonds, 1 cup, ground
    Cantaloupe, 1 cup, balls (mashed)

    Instant Nonfat Dry Milk Powdered, 4 tbl dry
    (to equal 1 cup reconstituted)
    Vanilla Extract, 1 tsp

    Raisins, 1 cup
    Sunflower Seeds, without salt, 1/4 cup, hulled


Combine egg whites, oil and sweetener.
Combine dry ingredients: flours, ground flax seed, baking powder, cinnamon.
Grind nuts.
Mash cantaloupe (other fruits can be substituted)
Reconstitute milk to equal 1 cup.
Vanilla extract 1 tsp
Combine all of above; add raisins and sunflower seeds..

Divide mix between 2 non stick loaf pans

Bake 350F for 35 to 45 minutes.
Remove from pans to cooling rack.
Let cool completely to make slicing easier. Freezes well.

Serving Size: Each loaf makes 14 slices (recipe + 28 slices)
