    1 1/4 cups whole wheat flour
    1 1/4 cups oat flour (oats in a blender)
    1 1/2 cups sugar
    1 TBS pumpkin pie spice
    1 tsp baking soda
    1/2 tsp salt
    2 cups pumpkin
    1/2 cup applesauce
    2 eggs lightly beaten
    2 cups finely diced apples


Mix first 6 ingredients in large bowl. Mix eggs, pumpkin and applesauce in medium bowl. Add wet ingredients to dry and stir until just moistened. Add finely diced apples. Scoop into 18 muffin cups. Bake at 350 35-40 minutes.

  • I love these muffins. On my second batch I modified them a bit to make them a little lower in cholesterol. I used egg whites and substituted canola oil for the yolks. Also, to save time I left out the diced apples and added a little more applesauce in their place. Very good! - 1/8/08
