    1 pound ground pork
    2 cups frozen spinach (~8 oz by weight)
    1 small onion, diced
    2 c loves garlic, minced
    1 can of cannelini beans, drained
    4 tblsp. apple cider vinegar
    1 tsp. thyme
    1 tsp. rosemary
    ~1 tsp. salt


Brown the ground pork in a pan with a bit of macadamia or peanut oil, then add the onion and garlic and sautee until translucent. Reserve.

Thaw the spinach and cook through in pan, then add the beans and pork mixture, vinegar, herbs, and salt to taste. Cook the beans through, then reduce heat and cover. Let sit for 5 minutes to get the flavors through the dish, then serve.

Serving Size: Makes 2-4 servings
