Ingredients

    2 cups cornmeal
    1 1/2 cups flour
    2 teaspoons baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 cups buttermilk
    1/4 cup canola oil

Directions

Spray 24 muffin cups with non-stick spray.
Preheat oven to 425 degrees.
Stir together the dry ingredients. Add the oil and buttermilk.
Stir until just blended well, don't over mix.
Spoon the mix into the muffin cups. Shake the filling down into the cups.
Bake for 15 minutes.

Serving Size: Makes 24 regular size muffins
