    1/2 medium onion, diced
    2.5 c pre-made lentils
    1 cup salsa
    1 cup water
    15 oz.. refried beans
    4 oz diced green chiles
    12-14 corn tortillas
    1 can mild enchilada sauce (the BIG one)
    1-ish cup shredded cheese


Soften tortillas if needed.

Preheat oven to 350.

Spray skillet generously with cooking spray and sautee diced onion.

Add lentils, salsa and water. Bring to slight boil

Add diced chiles and beans, stir until well combined.

Pour a small amount of enchilada sauce in the bottom of a 9x13 baking pan or casserole dish.

Divide filing evenly onto tortillas, roll up and place in baking dish

Pour on remaining enchilada sauce and top with cheese

Bake for 30 minutes until cheese is browned and melted.
