Ingredients

    2 ripe banana
    1/2 cup brown sugar
    1 egg
    1 tsp vanilla extract
    3 tbs melted butter
    3 tbs nonfat plain yogurt
    1 cup flour
    1 1/2 tsp baking soda
    1/2 tsp salt
    1/4 cup walnuts
    1/8 cup pinenuts
    1/4 cup choc chips

Directions

Preheat oven to 375
mash 1 banana and set aside for later
mix the other banana and sugar well then add egg, butter and vanilla extract till mixed well
then mix in dry ingredients till flour in incorporated in.
gently fold in mashed banana, nuts and choclate and use a ice cream scoop to fill muffin holders
cook for 20 min or until toothpick comes out clean and then cool slightly and serve

Serving Size: makes 9 full size muffins
