Introduction

A hearty soup that I put together after learning to make a couple of soups and changing it up to my own liking :) A hearty soup that I put together after learning to make a couple of soups and changing it up to my own liking :)
Number of Servings: 14

Ingredients

    32 oz. chicken broth
    28 oz can of diced tomatoes
    15 oz can of black beans (drained)
    1 cup Orecchiette pasta
    1 lbs lean ground turkey meat
    6 oz can of tomato paste
    1/2 onion (diced)
    1/2 bag of frozen corn
    2 stalks of celery
    4 carrots
    1 zucchini
    1 yellow squash
    salt to taste
    pepper to taste
    any other seasonings you like (I added cayenne, onion powder, garlic powder, chili powder)

Directions

Sauté onion and brown turkey meat together. Add tomato pasta and season with garlic powder, salt, and pepper.

Chop up zucchini, carrots, celery, squash.

In large pot combine chicken broth, diced tomatoes, and black beans and seasonings. Add veggies to pot and ground beef. Bring to boil.

Cook pasta according to directions and add to soup.

Simmer 30-40 minutes.

Serving Size: Makes 14 1-cup servings
