Introduction

Ingredients

    -2 cups okra (fresh)
    -2 tbsp unsalted butter (feel free to substitute)
    -1/2 cup chopped onion
    -1/2 cup chopped green pepper (bell)
    -2 cloves minced garlic
    -2 cups chopped, peeled tomatoes
    -salt, pepper, and ground red pepper to taste

Directions

1) In a large skillet, cook chopped onion, green peppers, and garlic in butter until tender (approx. 5 minutes). Stir in okra and tomatoes, salt, pepper, and red pepper. Bring to boil; reduce heat and simmer for 20-30 minutes or until very tender.

Serves about 4.

**Great with crumbled bacon, too!
