    Old Fashioned Meat Loaf

    2 cup textured soy protein or Quinoa
    1 1/2 cup cooked brown rice
    3/4 cup flax seed meal
    1/2 cup nutritional yeast
    1 1/2 cup ground walnuts or pecans or almonds
    6-8 eggs depending on size and how loaf sticks together
    1 1/2 onions, diced
    1 cup pepper, diced
    1 cup celery, thinly diced
    2 cup veggie stock
    Ener-G Egg Replacer, equivalent to 2 eggs
    1/2 cup tomato sauce
    1 pkg. onion soup mix
    1 teaspoon liquid smoke
    1/2 teaspoon garlic powder and ketchup for the top!

    In order to be GF substitute:

    8TBS onion flakes 1 teas garlic powder 1 teas onion powder for the onion soup mix.

    Cook Quinoa according to directions and follow recipe directions if soy protein is used.



Mix together the Soy protein or Quiona and the veggie stock, set aside (I cook Quinoa). When all the stock is absorbed mix the textured soy protein or Quinoa with all the rest of the ingredients and divide the mixture in half to fill two loaf pans that have been prepared with non stick spray.

Cover the tops of the loaves with ketchup and bake for 1 1/2 hours at 375. Serve with vegan gravy and mashed potatoes and green beans or carrots for a real blue plate special!
