    400g lean pork mince
    1 egg
    2 tsp Soy Sauce
    2 tbs Coriander, finely chopped
    2 tsp Ginger, freshly grated
    2 tbs Cornflour
    1 lt Chicken stock
    8 button mushrooms, quartered
    1 cup snowpeas, trimmed and sliced diagonally
    1 cup carrots, sliced
    400g Udon Noodles


Combine mince, egg, soy sauce, coriander and ginger. Shape into 12 balls. Roll in cornflour.
In a deep pan or wok bring stock to boil. Drop in mince balls and simmer for 8 minutes. Add mushrooms and noodles and cook a further 2 minutes, until noodles are almost cooked. Add carrot and snowpeas and cook to your taste.
