    16 ounces Ground Turkey
    4 Medium Yellow Bell Peppers
    1 cup uncooked rice
    1 medium sized red onion (chopped)
    2 TBSP parsley
    1 TBSP dill weed
    1/4 cup pine nuts (scant)
    1/3 cup olive oil
    1 1/2 TBSP mint
    3 TBSP Lemon Juice
    1 tsp ground cinnamon
    1 1/2 tsp salt
    1 tsp pepper
    2 cups boiling water


Preheat Oven to 350 degrees
Prepare peppers for stuffing

In a Large Skillet cook the ground turkey until done, then set aside.
In the same skillet heat 1 1/2 TBSP olive oil and cook pine nuts just until slightly browned then set aside
In the same skillet Add remaining olive oil and cook onions for 10 mins. Add the rice and pine nuts and cook for 1 minute the add 1 cup of the boiling hot water and 1 1/2 tsp salt.
Stir until water is almost all gone. Add the remaining ingredients including the turkey.
Let the mixture cool for 10 mins.
Stuff each pepper and place in a 9x13 pan. Sprinkle oil over the peppers and add the remain 1 cup of boiling water and cook in the oven for 30 mins. Then baste with the cooking liquid and cover with foil. Cook 15 minutes more.
