    6 cups homemade chicken broth
    2 lbs carrots
    2 medium onions
    3 inch pc of fresh ginger root
    1 tbs olive oil
    cayenne pepper, salt and pepper to taste


saute onions in oli until translucent, add ginger and saute until fragrant. Add to large pot with broth and carrots. simmer until carrots are extremely tender. Puree until smooth. Taste for seasoning and adjust as needed.
