Fast and easy enchiladas that can be spiced up or toned down per your preference. Fast and easy enchiladas that can be spiced up or toned down per your preference.
Number of Servings: 6


    12 corn tortillas
    3 boneless/skinless chicken breasts
    3 cups of shredded cheddar cheese
    1 cup your favorite enchilada sauce
    1 jalapeno pepper
    1 cup salsa


_ Prep Work_

Prepare the chicken as stated below:

*Put chicken breasts in a deep pan, cover with water, add salt and pepper. Cook on medium heat for 20 mins or until cooked and easily shredded.


*Bake chicken in 400 degree oven for 30 minutes or until done.

Shred chicken
grate cheddar cheese
dice jalapeno ( seeds can be used if extra heat is desired, thrown out if not)

1. Add shredded chicken, salsa, and jalapeno, as well as 1-2 tbs of water to a pan. Cook together until chicken is hot

2. Place a small bit of chicken and cheese in the center of tortilla

3. Roll tortilla and put in baking dish

4. Repeat for existing tortillas

5. Cover with enchilada sauce.

6. Bake in 350 degree oven for 10-15 mins or until cheese is bubbly

Serve and Enjoy!!

Makes 6 servings, 2 enchiladas each.

All ingredients are negotiable and approximate. I don't often measure when cooking but you can adjust to recipe to what suits your family, using this as a base.

I like to serve this with refried beans and a scoop of spanish rice.
