Ingredients

    Beef, round steak, 2.5 lb
    *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.) quartered
    Baby Carrots, raw, 25 medium
    *Canola Oil, 2.5 tbsp
    Paprika, .7 grams
    Diamond Crystal Kosher Salt, 0.7 gram(s)
    Garlic powder, .07 grams
    Pepper, black, .07 grams
    *Onion powder, .3 tsp
    Pepper, red or cayenne, .07 grams
    Oregano, ground, .07 grams
    Thyme, ground, .07 grams

Directions

Preheat oven to 375. Heat up a cast iron pot with 2.5 tbsp of canola oil. Mix all the dry ingredients together. Quarter the potatoes. Rub the seasoning all over the roast beef. Then brown all sides, add potatoes and carrots all round the roast beef and put in the oven. Cook until internal temperature reads 140 or about 40 minutes. Let meat rest.
