    Ground Pork, 5 oz
    Egg substitute, liquid (Egg Beaters), 1.5 cup
    Egg, fresh, 4 extra large
    Spinach, fresh, 3 cup
    Mushrooms, fresh, 2 cup, pieces or slices
    *onion, fresh, 148 gram(s)
    Cheddar Cheese, 0.5 cup, diced
    Black Olives, canned (small-extra large), 6 tbsp


Brown sausage well, drain, return to pan and add onions. Cook med-hi for 2-3 minutes, add mushrooms. Continue cooking until mushrooms are softer, add spinach. Cook only a minute or too and then remove pan from heat. In a large mixing bowl combine the egg substitute, eggs, olives and if desired, salt and/or pepper. Spoon mixture into a pre-sprayed *lined* cupcake pan (can double the cup cake liners) and sprinkle the shredded cheese on top. Bake at 350-375 for 18 to 22 minutes, remove and enjoy. These breakfast treats can keep in the refridgerator for one week.
