Penne Pasta Salad Penne Pasta Salad

Ingredients

    Barilla Plus Penne Pasta (14.5 oz box)
    2 cups chopped fresh broccoli florets
    2 cups carrots chopped into bite-sized pieces
    2 cups cherry tomatoes
    1/2 cup Kraft Free Italian Dressing
    1/2 cup Kraft 2% Milk Sharp Cheddar Cheese

Directions

cook pasta as directed. Place chopped broccoli and carrots into strainer. To drain the pasta, pour it into the strainer containing the vegetables to blanch them. Toss vegetables and pasta and place in refridgerator until chilled. Toss other ingredients with pasta mixture and serve cold.
Prep time above includes the time needed to chill before adding other ingredients.

This would be really good with tuna too if you want to add more protein.

Optional: add 1/4 cup black olives

    I use almost the same recipe, except my family likes their veggies a little more cooked. Just throw the veggies into the water with the pasta for the last couple of minutes, then strain. Fast prep and better as left overs than the first day! - 6/30/09

    Great Recipe. My daughter and I made this using the opened boxes of pasta we had left in the house (all whole grained), added bell peppers, onions and turkey pepperoni and have enough to eat for a couple of days at work. When its 100+ degrees outside we were looking for something healthy and cool. - 6/30/09

    Delicious side dish. I blanced the veggies in the water before I cooked the pasta. It was a little dry so I would add a little more dressing. The next day I added tuna and made a nice lunch. - 4/18/10

    I made this yesterday and my mom loved it. Because of my crohn's we used reg. pasta instead though. I even found a recipe for italian dressing and made that as well. There was enough for lunches today and a little extra for snack. Oh, because my mom loves vegs I threw in corn & peppers too. - 6/6/13

    blanched veggies are definitely the way to go. Also, skip the cheese and use balsamic vinegar and olive oil to get rid of the cheese calories and artificial sweetener in that dressing. - 7/23/12

    I really liked this! I added tuna, and spices- plus I added the cheese before putting it into the fridge, so it would melt a little onto the pasta. Really yummy! - 8/2/10

  • Some people don't care for the taste of whole wheat pasta. I have been introduced to a pasta called Dreamfields. It is only 5 net carbs per serving and taste like regular pasta. I have encouraged others to try it and so far, everyone loves it! It is found in our local grocery store. - 6/30/11

    It was 14 servings because I made the whole box of pasta for my family. If you don't want to make the whole box, you can reduce the recipe to fit your needs.

    I used Barilla Plus which is a multi-grain. I believe that Barilla also offers whole wheat if you didn't want to use a multi-grain pasta.
