Ingredients

    2 scoops whey protein (I used Optimum Nutrition 100% Gold Standard Whey, White Chocolate flavor, but any chocolate flavor will do)
    1/2 c. canned pumpkin
    1/2 c. coconut flour
    2 Tbsp macadamia nut oil
    3 eggs
    1 Tbsp unsweet cocoa powder
    1/3 c. water
    1/2 Tbsp cinnamon
    3/4 tsp. baking powder
    3 packets Truvia

Directions

Combine all dry ingredients, adding baking powder last. In a separate bowl, combine wet ingredients (pumpkin, eggs, oil, water). Add the dry mix to the wet, stirring as you go.

Pour into greased muffin tins (I used coconut oil spray) and bake at 400* for 25 minutes, until a toothpick in the center of one of the muffins comes out clean.
