    1 large onion chopped
    7-8 stalks celery, chopped
    6-7 large carrots, chopped
    2-3 cloves garlic, mashed
    1 tbsp olive oil
    1 red bell pepper, chopped
    1 green bell pepper, chopped
    1 lb chicken, chopped rough
    5 turkey sausages, casings removed and crumbled

    1 can diced tomatoes
    1 can bean, black or kidney
    1 can tomato sauce
    1 can water
    1 cup chicken broth

    1 pkg Brown Gravy mix, I used Southeastern Mills
    1/4 cup cajun seasoning, or as preferred
    1/2 tbsp paprika, or as preferred
    1 tbsp dried parsely flakes
    1tsp-1 tbsp cayenne pepper, as preferred
    Salt and pepper to taste


Combine first 5 ingredients in large pan or pot and saute. Once tender, add in bell pepper. Crumble in turkey brats and let cook until veggies absorb meat flavor. Add chopped chicken and cook 2-3 minutes more. Add tomatos, tomato sauce, water, chicken broth and gravy mix. Stir in seasonings. When simmering, add the beans. Stir and let cook down another 10-15 minutes. Serve over rice.
