    1 1/2 cups yellow corn meal
    2 tsp baking powder
    1/2 tsp salt
    1 1/4 cup reconstituted nonfat dry milk
    1 large egg
    2 tbsp corn oil


Preheat oven to 450 degrees. Spray 8" cast iron skillet with nonstick spray and place in oven while preparing batter. Mix all dry ingredients. Make a well in the center of the dry ingredients and add wet ingredients. Mix well. Pour batter into hot skillet then bake in oven for approximately 25 minutes until golden brown.

I generally cut this into 16 slices because I have small children who only eat that amount. Adults usually prefer to eat 2 or more slices.
