The most delicious crab enchiladas ever! I like to use the thicker, homemade corn tortillas for this one. The most delicious crab enchiladas ever! I like to use the thicker, homemade corn tortillas for this one.

Ingredients

    Crab, canned, 2 can (6.5 oz), drained
    *Cream Cheese - Kraft Philly Lowfat, 10 tbsp
    Scallions, raw, 2 medium finely chopped
    Corn Tortillas, 8 tortilla, medium

    Sour Cream, 0.2 cup (remove)
    Tomatillos, 4 medium, husks removed and charred on the grill
    Onions, raw, 0.2 cup, chopped
    Cilantro, raw, 6 tbsp , chopped

    Cojita Cheese, 1 oz , crumbled

Directions

Mix the drained crab, green onions, and cream cheese ni a bowl. you might have to heat the cream cheese beforehand to make it easier to mix up.

Spray glass baking dish with cooking spray. Fill corn tortillas with crab mixture and place seam side down in dish.

Meanwhile char tomatillos on the grill. Blend tomatillos, onions, and cilantro in a food processor. Stir in sour cream.

Pour over enchiladas and top with Cojita cheese.

Bake 15 minutes, turning on broiler the last couple of minutes to melt cheese.

Serving Size: 2 1/2 enchiladas
