    8 oz. pork, diced
    8 c. onion, diced
    2 2/3 olive oil
    1/2 c. beef stock
    4 tbsp. apple cider vinegar
    4 garlic cloves, chopped
    salt and pepper to taste


In nonstick saute' pan, add oil, diced pork, and onion. Cook pork and onion over medium heat until broth are browned. When onions have caramelized to a brown color, add beef stock, vinegar, and garlic. Bring mixture to a boil, then reduce heat and simmer for 30-45 minutes. Place an equal amount of the pork-onion mixture on two dinner plates and serve.
