    1 Tbsp Olive Oil
    1 clove garlic, minced
    1/2 cup chopped onion
    1 can of kidney beans
    2 cups fresh spinach
    1 cup canned tomatoes, no salt added (diced)
    4 oz cream cheese
    2 cups cooked spaghetti noodles
    black pepper
    Parmesan Cheese (1 Tbsp. each serving)


Heat oil in skillet on medium heat, add garlic and onion. Saute until soft. Add beans, spinach, and tomatoes. Stir in cream cheese and keep stirring until melted into the sauce. Add the noodles, toss and season with oregano, basil and black pepper to taste. Serve with Parmesan cheese.

Serving Size: Makes 4 1/2 cup servings.
