Ingredients

    Dressing:
    1/4 cup EVOO
    2 TBSP lemon juice
    2 TBSP seasoned rice vinegar
    1 TBSP Dijon mustard
    1 garlic clove, minced

    1 can or 2 cups garbanzo beans, drained and rinsed
    1/4 chopped red onion
    1 green bell pepper, finely chopped
    8 oz. firm tofu, drained and cut into 1/2 in. cubes

Directions

Whisk together dressing ingredients. Stir in beans, onions, and peppers. Gently toss in tofu. Allow to sit for at least 30 minutes before serving.

Serving suggestion (not included in calorie count) is to serve in romaine lettuce bowl or over tossed salads. Works well as a meal in itself!
