Ingredients

2 T. Olive oil
4T vegetable oil
3lbs pot roast, with all visible fat removed
2 onions
1 clove garlic
Tops/bottoms of a bunch of celery
3 carrots
2 c. Low-sodium beef broth
1c. pearl barley
Directions
Cut meat into 1" cubes. Cover bottom 4qt dutch oven with oil. (We ran out of vegetable oil.) Sear the meat. Put meat aside.
Sautee onions, carrots cut into 1", and celery sliced. Once onions soften, add meat. Pour in broth & barley. Simmer for two hours.
