Fresh salad with crunchy veg plus the power of protein! Fresh salad with crunchy veg plus the power of protein!
Number of Servings: 10


    1 can of cooked chickpeas
    4 cups chopped fresh broccoli florets
    2 large red peppers chopped into 1 inch chunks
    1/4 cup shelled sunflower seeds
    1 small bunch of green onion sliced thinly
    1/2 cup olive oil
    2 tbsp of red wine vinegar
    2 tbsp of white vinegar
    2 tbsp balsamic vinegar
    1 tbsp white sugar
    salt and pepper


Rinse the chickpeas and toss in with the chopped vegetables in a large salad bowl. Mix oil, vinegars, and sugar and pour over salad. Stir well and let marinate for a few hours if possible before enjoying.

Serving Size: Makes a large salad bowl...10 (1) cup servings
