    Olive Oil, 1 1tsp
    Onions, raw, 1 medium (2-1/2" dia)
    Pepper, black, 1 tsp
    Broccoli, fresh, 1 cup, chopped
    Egg white, 2 serving
    Milk, 3.25%, 1 cup
    Nutmeg, ground, 1 tsp
    Blue Cheese, 1 oz
    Egg, fresh, 1 large
    Herb de Provence
    Sea Salt


Saute onion in olive oil and add herbe de provence and a dash of sea salt. Once onions are carmelized, blanche brocooli by cooking in boiling water for 10 seconds, then plunge in ice bath. Drain and chop into small pieces.

Whisk together egg, egg whites, milk and nutmeg, season with a pinch of sea salt and black pepper. Spread onions, broccoli and blue cheese into bottom of quiche dish sprayed with olive oil. Pour egg mixture over top and push undy any ingredients not covered by egg.

Bake at 400 degrees until set and golden brown (about 25 min). Rest at room temperature for 10 minutes to settle.

mix all ingredients adding Herb de provence and sea salt for flavor.

Serving Size: I cut into four sections because calories are so low
