Ingredients

4 Egg Whites
2 tbsp Water
1 tsp Coconut Oil
2 tbsp Shallots, diced
1/3 cup Tomatoes, diced
1/3 cup Green Bell Pepper, diced
1 Garlic Clove, minced
1 tbsp Grated Parmesan Cheese
2 tbsp Cocktail Sauce (optional)
Pepper to taste
Directions
Combine egg whites, water, and pepper in a bowl and whisk well. Set aside.
Heat the coconut oil over medium-high heat. Turn the heat down to medium and add your veggies. Saute until done and then remove from pan.
(Note: The coconut oil is what makes this omelet! I *love* coconut oil! I use it on a lot of things, it adds a LOT of flavor! Just use sparingly as it is high in fat.)
Pour egg whites in heated pan. Cook over medium/medium-low heat without touching until the top of the eggs are firm. Add your veggies to the center of the eggs, reserving a small amount for garnish. Fold the sides over into an omelet.
Remove from pan and garnish with the reserved veggies and the grated parmesan cheese.
Here's the unusual part -- the omelet is quite tasty as is, but if you like garnish or dip like salsa or ketchup with your eggs, try cocktail sauce! YES, like you use with shrimp! I read this somewhere and tried it, and holy cow it's amazing! A little sauce goes a long way to add to the flavor of your omelet without additional calories. Enjoy!
