Ingredients


    1 medium Idaho Potato
    2 slices of Bacon
    1/4 C. Cream Cheese, Fat Free,
    1/4 C. low fat chedder or colby cheese shredded
    1/8 C Whole Milk / Vitamin D,
    Fresh Thyme
    Salt to taste
    Pepper to tast



Directions

Wash potatoe and punch with fork. Wrap with foil and bake until tender.
Cook bacon and crumble. Divide into 2 small bowls.
Mix cream cheese, thyme, salt and pepper in mixing bowl.
Slice potatoe in half lengthwise and place on cookie sheet.
Use small scoop to scoop out inside, being carefull not to get to close to the skin.
Add potatoes to the cream cheese mixture.
Blend - add milk as need to desired texture.
Use scoop to dispense mixture back into the potatoe skins Top with shredded cheese and the other half of bacon.
Return to the oven and bake untill the cheese is melted.
