Ingredients

    1 Egg
    2 Egg whites
    1 tspn olive oil
    1 string cheese, reduced fat

    May add vegetables if desired.

Directions

Heat oil over low to medium heat
Mix together egg and egg whites (or put directly into pan)
Allow eggs to start cooking, then turn
Put strings of the string cheese over the top of the cooked side.
Turn again to melt and brown cheese.
Serve
