Number of Servings: 12

Ingredients

    12 Chicken Breast, no skin/no bone - 4-5 ounces each
    Soy Sauce - Low Sodium - 3 tbsp
    Sweet&Sour Sauce - Kraft - 12 oz jar
    Coconut, sweetened, 2 cup
    Water - 1 cup
    Sesame Seed - Roasted - 1 tbsp
    Onions - 1 medium, sliced
    Bellpepper - 2 large, sliced
    salt/pepper to taste

Directions

Layer chicken in extra large baking dish or roasting pan. Mix the soy sauce, sweet and sour sauce, coconut and water in medium bowl. Slowly pour mixture over chicken making sure each piece is covered with sauce. Sprinkle sesame seed lightly over the chicken. Roast in 200 degree oven for about 2 hours or until chicken is done. Remove from oven and let sit for 10 minutes. Slice onion and bellpepper. Slice chicken pieces. Place all back in oven for an additional 20 minutes. Salt and pepper to taste.

Serve with wild brown rice or tofu pasta (not included in nutritional info).
