    2 cups sliced zucchini
    1 cup chopped onion
    2 cups sliced mushrooms
    1/2 lb Italian turkey sausage
    olive oil
    1 cup skim milk
    1 tsp dried oregano
    1/2 lb grated mozzarella or fontina
    1/2 lb penne or other small pasta


Heat oil in skillet and saute all vegetables until soft. Season with salt & pepper. Put aside. Brown sausage and add vegetables back. Add oregano and warm thoroughly. Add milt and stir until bubbly. Add cheese and stir until melted and a sauce forms. Serves 4 - 6.
