- I reversed the cream cheese and cottage cheese amounts, I used light yogurt instead of light cream or milk and potato starch instead of flour and 2 TBL Splenda Sugar-Blend - mixed with 1/2 Cup Splenda.

Ingredients

    2 C cream style cottage cheese, 1%
    8 oz neufchatel cheese
    1/2 Cup Altern no calorie sweetener
    2 TBL Splenda Sugar-Blend
    2 TBL potato starch (or cornstarch)
    2 Large Eggs
    Great Value Light Yogurt

Directions

In a large mixer bowl beat un-drained cottage cheese till almost smooth. A blender works much better!
Beat in cream cheese, 3/4 cup sugar ( I used 1/3 sugar, 2/3 Altern), cornstarch, and vanilla.
Add eggs all at once, then beat with an electric mixer on low speed just till mixed.
Do not over-beat.
Stir in yogurt, I like Strawberry Banana.
Pour filling into greased pan. (I use butter Pam)

Bake in a 350° oven for 50 to 60 minutes or till done.

* I used Potato Starch because I found it really cheap and I like using it for gravy! Cornstarch will work equally well and easier to find.
**half batch only took 25 minutes**
Cool on a wire rack for 5 to 10 minutes.
