    1/2 tsp. Cumin Powder
    1/2 tsp Coriander leaf, dried
    1/2 tsp Cardamom, ground
    1/4 tsp Cinnamon, ground
    1/4 tsp Ginger, ground
    1/8 tsp Cloves, ground
    1/4 tsp Pepper, black
    1/2 Tbsp Garlic, Fresh minced
    1 Tbsp 100% Natural Tomato Paste
    1/8 tsp Sambal Oelek Paste of Chili
    1 tsp dry mustard powder
    2 Tbsp Aged Balsamic Vinegar
    750 gram Beef, top sirloin roast trimmed


night before combine all spices and seasoning into a paste and rub all over the roast.
In the morning heat oven to 425 and place roast in oven for 20 minutes. then reduce heat to 170F for up to 9 hours.
Internal temp should be a minimum of 140F.
