Ingredients

    * Potato, raw, 1 large (3" to 4-1/4" dia.) (remove)
    * Buttermilk, lowfat, .25 cup (remove)
    * *Cabot Vermont 50% Light Cheddar Cheese, .5 oz (remove)
    * Mushrooms, fresh, .12 cup, pieces or slices (remove)
    * Green Peppers (bell peppers), .15 cup, strips (remove)
    * Bacon, 1 medium slices, cooked (raw product (remove)
    Salt and pepper
    Fresh chives
    Add an Ingredient

Directions

Cut the potatoes into small pieces and cook until tender. Add salt and pepper to taste. Chop the chives.

Cook the bacon until crisp. (you can use bacon bits as a substitute if you don't have bacon.

Cut up mushrooms and green peppers into small pieces. Grate the cheese.

Add buttermillk. chives, mushrooms, bacon and peppers. Server hot.

Serving Size: Makes a very generous serving.
