Introduction

Ingredients

    * 1 Tbsp olive oil
    * 1 medium onion, chopped
    * 5 cloves of garlic, diced
    * 1 yellow pepper, diced
    * 1 cup mushrooms, sliced
    * 1 cup baby carrots, diced
    * 2 tsp dried oregano
    * 2 tsp dried basil
    * 2 tsp dried thyme
    * 2 dried bay leaves
    * fresh ground pepper, to taste
    * 1 can diced tomatoes, drained
    * 1 can crushed tomatoes
    * 1 lb lean ground beef, drained

Directions

In a large pot, heat olive oil over medium-high heat. Add onion and garlic and cook until softened. Add yellow pepper, mushrooms, carrots, oregano, basil, thyme, bay leaves, and ground pepper and cook until vegetables are softened. Add both cans of tomatoes and cook until boiling, stirring occasionally. Turn heat down to medium-low and allow to simmer while you brown the ground beef. After draining the beef, add to sauce, turn to low and allow to simmer for 30-45 minutes.

Serving Size: makes 6 servings

    Haven't tried this yet, but sounds great. Just a note about calories. There's a mistake in the bay leaves. 2 bay leaves will not add 52 calories per servings...what was input was 100 Tbsp in the original entry of the recipe...so you can safely lose 51ish calories off the count. - 12/9/12
