Introduction

My verion of Good Housekeeping's Blueberry Muffins - with whole wheat flour instead of white and 1.5 cups of blueberries instead of .75. My verion of Good Housekeeping's Blueberry Muffins - with whole wheat flour instead of white and 1.5 cups of blueberries instead of .75.
Number of Servings: 10

Ingredients

    1 3/4 cups of whole wheat flour
    1/3 cup of sugar
    2 tsp baking powder
    1 beaten egg
    3/4 cup skim milk
    1/4 cup olive oil
    1 1/2 cups frozen or fresh unsweetened blueberries (I use Wyman's frozen).
    1 tsp lemon extract

Directions

combine dry ingredients in a large bowl, add in egg milk and oil and mix until just combined. Mixture will be lumpy. Then fold in blueberries. Lightly grease baking pan or use paper baking cups. Bake 20 minutes in 400 degree oven
