    2 tbsp Coconut Oil
    1 ea Onions, diced
    2 cups Butternut Squash, peeled and diced
    1 ea Red Bell Pepper, diced
    1 tsp Sea Salt
    1 tsp Black Pepper
    1 tbsp Chives, chopped


1. Heat skillet on med heat. Add coconut oil.

2. Add diced onion and cook until translucent. Add the squash and turn the heat up to med-high. Gry about 10 minutes, sturring occasionally to prevent sticking.

3. Add the bell pepper, salt and pepper. Fry about 5 more minutes, or until the hash is browned.

4. Sprinkle with chives and serve.

**Would be great with a fried egg on top and/or diced bacon or pancetta.
