Introduction

Number of Servings: 6

Ingredients

    2 C dry pasta (I had ziti on hand)
    3 4 oz boneless skinless chicken breasts
    2 C Silk Original Coconut Milk
    1/4 C grated Parmesan cheese
    2 Tbsp butter
    1 Tbsp AP flour
    2 tsp garlic powder
    1 tsp salt
    1 tsp pepper

Directions

Boil pasta with 1/2 tsp of salt until al dente. Heat skillet over medium heat; season chicken with dash salt and pepper. Pan fry with cooking spray until golden brown; remove to plate. Add butter to pan, scraping up any browned bits. Add flour and cook, stirring for 1 minute. Add coconut milk and remaining seasonings. Bring to a boil, return chicken to sauce, let simmer for 15 minutes over low heat. Remove chicken, slice for serving. Turn off heat, stir in Parmesan until combined. Add cooked pasta and toss.
